U and I (Utah-Idaho) Sugar Company maintained several sugar plants in Washington State during the 20th century. By the late 1970s, the U & I brand would disappear, with the last Washington plant, in Moses Lake, closing in 1978.

This U and I recipe booklet contains recipes for sweets, submitted by regional home economics editors and food specialists at local institutions such as KOMO, KING-TV, Seattle City Light, and University of Washington. Miss Inez Eckblad of the WSC Food Extension in Pullman submitted "Pumpkin Pecan Ice Cream Tarts," and the in-house Home Economist for U and I Sugar shares "Sour Cherry Preserves." The booklet lists a local address of 561 Colman Building in Seattle, where a homemaker could write for a "copy of this booklet for yourself or for friends."
