H. Vennes and Son, Poulsbo's Famous Boned Lutefisk, circa 1955
Order an ImageIn the early part of the 20th century, Poulsbo was famous as a cod processing center. Ships would dock in Poulsbo to unload fresh cod which was then salted and shipped to all parts of the United States. In later years, Poulsbo would emerge as a center for lutefisk processing. Lutefisk is made from dried fish treated with lye and is found in the food traditions of Nordic countries. This card, courtesy of H. Vennes and Son of Poulsbo, offers two "tested recipes" for lutefisk, involving steaming or baking and serving with butter or sauce.
