The Washington and Idaho Dry Pea and Lentil Commissions were first formed in the early 1960s in order to support a growing legume industry. The original "office" was a small trailer perched right on the state border between Pullman, Washington and Moscow, Idaho. The Commissions would later expand their mission and grow to a national organization charged with funding and directing research, marketing, government affairs, and educational programming.

This small booklet of recipes features a large serving bowl of green peas on its cover. The interior pages describe the importance of peas in meal planning, as "exceptional food bargains" due to their ease of use and low cost. The second half of the book focuses on lentils and includes such recipes as "Go-With-Anything Lentil Salad" and "Lentejas con Fruta - Lentils with Fruit."
