Atago hand-held refractometer (brixometer) used by local food entrepreneur Jon Rowley to calculate brix, ca. 2008
Order an ImageJon Rowley, also known as the "fish missionary" by Julia Child, was an influential Seattle food marketer, restaurant consultant, and tastemaker. He used the Atago refractometer when testing the sucrose content, or brix, of fruits and vegetables at local farmers markets.
